French Recipe: How To Cook The Perfect Soupe à L’oignon!

Now that the nights are drawing in and the days are getting colder, we thought that we would share a recipe for a classic French Onion Soup with you, to help warm you up in the approach to winter!

Preparation time: 25 minutes

Cooking time: 20 minutes

Ingredients

Serves 4

  • 4 onions
  • 50 g of butter
  • 1 tbsp oil
  • 1 heaped tbsp butter
  • 25 cl white wine
  • 1l hot water
  • 4 slices of soft bread
  • 100g of grated compté cheese
  • Salt
  • Pepper

Method

While heating the butter and oil in a pan, peel and slice the onions and chop the garlic very finely. When this is done, and the butter has melted, add the onions and garlic to the pan and stir until they are soft and golden. Make sure that they do not catch, as the garlic, if burnt, will add a bitter taste to the soup.

Sprinkle the flour into the pan and stir until it has been incorporated. Then add the hot water and wine and season. Cover and leave to simmer for 20 minutes.

While you are waiting, toast the bread, and then, when the soup is ready, pour it into 4 separate bowls before adding a slice on top of each. Sprinkle the grated compté onto the bread, and melt it under the grill.
