We at Babylangues love helping our instructors discover classic French culture and what could be more classically French than the baguette? However, baguettes are usually only fresh the day they’re bought and you often end up with leftovers. Read on to discover how you can recycle your baguette and turn them into Petit Fours for a dinner party starter!
Petit Fours are little appetizers served at buffets or dinner parties that can be either sweet or savoury and include pastries, mini-pizzas and much more. The term Petit Four means “little oven” in English.

- A baguette (If you’re reusing an old baguette, best to store it in a plastic bag beforehand)
- 1 egg yolk
- 3 tablespoons of thick crème fraiche
- 200 g of bacon strips
- 100 g of grated gruyère cheese
- Salt and pepper to taste
Cut the baguette into slices (even baguettes that are two to three days old will work!).
Preheat the oven to 210°C.
Mix the egg yolk and the crème fraiche and season the mixture with salt and pepper.
Add the gruyère to the egg yolk – crème fraiche and mix everything together. Then spread the mixture onto each slice of baguette.
Cook the bacon strips on high heat in a pan for a few minutes and once cooked, distribute them evenly onto the baguette slices.
Place your petit fours into the oven and bake for a few minutes until they are golden brown.
You can customise this recipe how you like: add different toppings, change up the cheese, even use pastry instead of a baguette. Hopefully this has helped you give a new lease of life to your old baguettes while making a scrumptious starter as well!
